From the hebrew hot dog kosher commercial i saw the kosher part of the animal is the front. for example picture a cow, make a line through the middle, kosher is not the back part (where the but is at) but the front of it.

Kosher referrs to the method of butchering an animal. An animal that is kosher is bled out. And in ancient times people didnt eat the intestines and a few organs, just the meat.
